Carlton Farms

Carlton Farms supplies Baka Umai with pork and beef products. Carlton Farms states, “Carlton Farms is a family-owned producer of all-natural, artisan fresh pork, smoked pork, and beef products. Since 1956 we have partnered with Pacific Northwest family farmers who raise animals according to time-honored methods—naturally and humanely. Animals are raised to our specifications, without hormones, animal proteins, or growth accelerants.”


SP Provisions

SP Provisions supplies Baka Umai with pork, beef, chicken, and lamb products. SP Provisions states, “One of Oregon’s oldest companies, SP Provisions is deeply rooted in the Pacific Northwest. Since 1880 our business has been connecting local farmers to local communities, delivering quality products at affordable prices.”

Alexis Foods

Alexis Foods provides Baka Umai with special ingredients such as flour, tahini, gochujang, doubanjiang, bonito, konbu, etc. for our ramen. While Alexis Foods started out as a specialty provider for European ingredients, they have evolved over the years to provide food from local vendors that have emerged in the Portland area.

Smalls Family Farms

Through Alexis Foods, Baka Umai uses flour from Smalls Family to craft our Hakata, Tokyo, and Wheat ramen noodles. Per Smalls, “We have roots deep in the Walla Walla Valley and a strong commitment to sustainable farming practices that will ensure the future of family farming in our region. This is a family operation. We care for the land in a manner that reflects that the land is a member of the family. The land produces in a manner that reflects the way that we care for it.”

Shepherd's Grain

Baka Umai uses flour from Shepherd’s Grain to craft our Hakata, Tokyo, and Wheat ramen noodles. Shepherd’s Grain sources flour from wheat farmers along the west coast that are certified by the Food Alliance. The Food Alliance was formed by growers who practice sustainability.

Ota Tofu

Baka Umai sources 100% of our tofu from Portland based Ota Tofu, America’s oldest tofu manufacturer. Per Ota, “Ota Tofu is a small, family-owned business in Southeast Portland that over 108 years has a built reputation as the producer of the finest, freshest tofu in the region. Ota is a hidden gem in Portland’s vibrant food scene that provides a hand-crafted staple for NW groceries and restaurants providing demanding customers with quality, healthy and tasty ingredients in their meals.”

Choi’s Kimchi

Baka Umai uses Choi’s Kimchi for our pickled ginger and gochujiang. The gochujiang is used on a Chorizo-men and Cho-maz noodles.
